**Beef Stew**


**Ingredients:**


- 2 pounds beef chuck, cut into cubes

- 2 tablespoons olive oil

- 1 large onion, chopped

- 4 cloves garlic, minced

- 4 cups beef broth

- 2 cups carrots, chopped

- 2 cups potatoes, diced

- 1 cup celery, chopped

- 1 can (14 oz) diced tomatoes

- 2 tablespoons tomato paste

- 2 bay leaves

- 1 teaspoon dried thyme

- Salt and pepper to taste

- Chopped fresh parsley for garnish (optional)


**Instructions:**


1. **Brown the Beef:** Heat the olive oil in a large pot or Dutch oven over medium-high heat. Season the beef cubes with salt and pepper, then brown them in batches to get a nice sear on all sides. Remove the beef and set it aside.



2. **Sauté Aromatics:** In the same pot, add the chopped onion and sauté until it becomes translucent. Add the minced garlic and cook for another minute, stirring constantly.


3. **Deglaze the Pot:** Pour in a bit of the beef broth to deglaze the pot, scraping up any browned bits from the bottom. This adds flavor to the stew.


4. **Combine Ingredients:** Return the browned beef to the pot. Add the remaining beef broth, diced tomatoes (with their juices), tomato paste, bay leaves, and dried thyme. Stir well to combine.


5. **Simmer:** Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1.5 to 2 hours, or until the beef becomes tender. Stir occasionally.


6. **Add Vegetables:** After the beef has simmered for a while and is nearly tender, add the chopped carrots, potatoes, and celery. Continue to simmer, uncovered, for an additional 30 minutes or until the vegetables are cooked through and the stew has thickened to your desired consistency.


7. **Adjust Seasoning:** Taste and adjust the seasoning with salt and pepper as needed.


8. **Serve:** Remove the bay leaves. Ladle the beef stew into bowls and garnish with chopped fresh parsley if desired. Serve hot and enjoy!
