- 1 lemon, zest and juice

- Salt and black pepper to taste

- 1 onion, quartered

- 4-5 garlic cloves, peeled

- 2 celery stalks, chopped into chunks

- 1 cup chicken broth


**Instructions:**


1. **Preheat and Prep:** Preheat your oven to 425°F (220°C). Rinse the chicken under cold water and pat it dry with paper towels. Place it on a cutting board, breast side up.


2. **Herb Butter:** In a bowl, mix the softened butter, minced garlic, chopped parsley, rosemary, thyme, lemon zest, and a pinch of salt and pepper. This will be your herb butter. 


3. **Prepare the Chicken:** Gently separate the skin from the chicken breast by sliding your fingers underneath it. Be careful not to tear the skin. Take half of the herb butter mixture and spread it evenly under the skin, covering as much of the breast and thigh meat as possible. Rub the remaining herb butter over the skin of the chicken.


4. **Seasoning and Stuffing:** Season the cavity of the chicken generously with salt and pepper. Place the quartered onion, peeled garlic cloves, chopped carrots, and celery inside the cavity. Squeeze the juice of the lemon over the chicken and place the squeezed lemon halves inside the cavity as well.


5. **Truss the Chicken:** Trussing helps the chicken cook evenly. Use kitchen twine to tie the legs together and tuck the wings underneath the body of the chicken.


6. **Roasting:** Place the chicken on a rack in a roasting pan. Drizzle a bit of olive oil over the chicken and sprinkle with a little more salt and pepper. Pour the chicken broth into the bottom of the roasting pan to keep the chicken moist during cooking.


7. **Roast:** Put the chicken in the preheated oven and roast for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh without touching bone. Baste the chicken occasionally with the pan juices for extra flavor and moisture.


8. **Rest and Serve:** Once done, remove the chicken from the oven and let it rest for 10-15 minutes before carving. This allows the juices to redistribute throughout the meat. Carve and serve with your favorite sides, such as roasted vegetables or creamy mashed potatoes.
